Apple Cider Vinegar

Vegan Blueberry Muffins
  1. Preheat ove to 375 F
  2. Line muffin tin with baking cups
  3. Combine soy milk and apple cider vinegar
  4. Set aside soy milk and apple cider vinegar combination to allow milk to curdle
  5. Combine flour, baking powder, baking soda, and salt
  6. Mix sugar, canola oil, lemon zest, and vanilla extract
  7. Stri and combine soy milk and apple cider vinegar into mixture
  8. Add in the dry dry ingredients (be careful to not over mix)
  9. Spoon into muffin tins, filling each cup about 3/4 full
  10. Bake for 20-25 minutes until a knife inserted in the middle comes out clean
  11. Remove from heat and allow muffins to cool
